Roasted Cauliflower with Apple and Dill

Ingredients

  • 1 1/2 lb cauliflower, separated into florets
  • 1/2 large red onion in 1/4" slices, root to tip
  • 1 large unpeeled apple, coarsely diced
  • 3 T olive oil
  • 3/4 t salt
  • 3 T currants
  • 1/4 C + 2T coarsely chopped dill weed

Preparation

Step 1

Preheat oven to450 degrees.

Toss first 5 together. Spread in one layer in baking dish. Bake 20-30 minutes, stirring several times, until some edges begin to brown.

Stir in currants; bake for about 10 minutes more. Sprinkle with dill and stir.
