Baked Spinach and Onion Cheese Dip

  • 6 oz bag baby spinach (about 8 cups)
  • 2 tablespoons minced garlic
  • 4 tablespoons salted sweet cream butter
  • 1 large white or yellow onion, chopped
  • 4 cups fresh mozzarella cheese, chopped
  • 1.5 cups Parmesan cheese
  • 8 oz cream cheese

Step 1

Preheat oven to 400° F.
In a large skillet, melt butter over medium-high heat. Add chopped onions and cook until translucent about 5-10 minutes. Add baby spinach and garlic. Continue cooking an additional 5 minutes or until spinach is wilted. Remove from heat and set aside.
In a large mixing bowl combine cream cheese and Parmesan cheese together. Add the spinach mixture and stir until creamy. Next, mix in mozzarella cheese. Transfer spinach and onion cheese dip to a greased oven safe 2 quart baking dish.
Bake in 400°F for approximately 20-25 minutes or until cheese is brown on top and bubbling around the sides.
Serve with tortilla chips.
