Ingredients

  • 4 medium Chicken Breasts, no skin or bone
  • 2 oz. Half fat or low fat Cheese sliced or grated
  • 4 piece of very lean bacon with most fat removed
  • 1/2 c. Barbecue Sauce

Preparation

Step 1

Cut a pocket in each of the chicken breasts (don't cut all the way through)

Fill the pockets with the cheese

wrap the bacon around the chicken breast which will hold the pocket closed and keep the cheese in. May want to use a toothpick to keep it closed.

Put 4 stuffed breasts into 9x12 baking dish, and cover with barbecue sauce.

Cook in the oven for about 25mins on a medium heat until chicken is cooked through.
