Manicotti from Aunt Rita

Ingredients

  • Filling:
  • Dough - Makes 80 (1/2 recipe is enough for a large meal)
  • 6 eggs
  • 3 C flour
  • 3 C water
  • 1 1/2 teas salt
  • 2 # ricotta
  • 2 eggs
  • salt to taste
  • parsley
  • 1/4 C grated romano

Preparation

Step 1

Dough:
Mix eggs, flour, water & salt. Beat batter till free of lumps. Use about 1 Tbl of batter on grill, make a circle like a small pancake. Continue until all batter is used.

Filling:
Use electric mixer. Mix all ingredients until creamy. Use I teas on each pancake & roll. Put sauce (homemade or store bought) on bottom of pan. Place filled manicotti over sauce. Leave a little space between them because they do spread out. Put sauce and grated romano on top. Bake 1/2 hour at 350F..

Note: if you think the filling is too soft, Italian seasoned breadcrumbs can be used to thicken it. Not too much.....
