  • 4 1/2 bread flour
  • 1 teaspoon kosher salt
  • 2 teaspoons yeast
  • 14 ounces cold water (put ice in)

Step 1

Put dry ingredients into a bowl and mix. Slowly add cold water to flour stuff while mixing until right consistency.

Let sit 5 minutes.

Knead on a floured surface for 2 minutes.

Roll into a ball and place in a greased bowl and rise in a warm place until doubles in size.

Punch down and shaped into baguette pans.

Let rise 1 hour.

Preheat oven to 375 degrees with a jelly roll pan on the bottom shelf of the oven. Bake bread for 30 minutes.
Put ice cubes on jelly roll pan for last 15 minutes to make crust crispy.
