Chicken broccoli and pineapple stir fry

Ingredients
- 2 c Minute brown rice uncooked
- 2 t veg oil
- 1 pd bnls skinless ck breast cut in strips
- 1 medium onion thinly sliced
- 1 cup broccoli cut in florets
- 1 T fresh grated ginger root
- 2 cloves garlic minced
- 1 can (20 oz) pineapple chunks, drained and juice preserved
- 1/4 c low sodium soy sauce
- 1/4 c stir fry sauce
- 2 T cornstarch

Preparation
Step 1
prepare rice according to package directions
heat oil in large nonstick skillet over medium high
add chicken and stir fry about 7 minutes until no longer pink
add onion, broccoli, ginger and garlic and stir fry 3 more minutes
combine reserved juice, soy sauce, stir fry sauce and cornstarch in small bowl and add to skillet-bring to boil stirring constantly
add pineapple-cover reduce heat to low and simmer 2-3 mins
serve over brown rice
