Ingredients
- 4 cups corn
- 1 tablespoon butter
- 1 small onion
- 1/2 cup grated waxy potato
- 7 cups quik stock stock
- salt
- half and half
- chopped parsley
Preparation
Step 1
saute onion and potato until soft, add 1 cup stock, cook about 10 min.
Add rest stock, corn, salt and simmer 10 min.
Puree and pass through strainer.
return to pot and add cream, sprinkle with parsley.
