Scrambled Egg Casserole

Ingredients

  • 1/2 C butter or marg. divided
  • 2 TBL all-purpose flour
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 C milk
  • 1 C (4-oz) shredded process
  • american cheese
  • 1 C cubed fully cooked ham
  • 1/4 C sliced green onions
  • 12 eggs, beaten
  • 1 can (4-oz) sliced mushrooms,
  • drained
  • 1 1/2 C soft bread crumbs
  • additional sliced green onions

Preparation

Step 1


in med. saucepan, melt 2 TBL butter
add flour, salt & pepper
cook & stir until mix. begins to bubble

gradually stir in milk
cook until thickened & bubbly, stirring constantly
remove from heat

add cheese, mix well & set aside

in lg. skillet, saute ham & onions in 3 TBL butter until onions are tender
add eggs - cook & stir until begin to set
add mushrooms & cheese sauce - mix well

pour into greased 11X7X2" baking dish

melt remaining butter
toss w/ bread crumbs
sprinkle over top of casserole

cover & refrig. 2-3 hrs or overnight

bake, uncovered @350 for 25-30 min or until top is golden brown
sprinkle w/ onions if desired
