Scampi

Ingredients

  • 3 TBL butter
  • 2 TBL minced garlic
  • 1 1/2 LBS fresh shrimp
  • 1/4 C dry white wine
  • 1/2 C tomatoe sauce
  • 1/4 C dry white wine
  • 1/2 C heavy cream
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 2 egg yolks
  • salt
  • white pepper
  • 2 TBL fine minced parsley
  • hot buttered pasta

Preparation

Step 1


melt butter in skillet
add garlic - cook stirring constantly for abt 1 min.
add shrimp & cook over med-high heat, tossing w/ wide spatula,
until shrimp are bright pink on both sides
add white wine & tomato sauce & cook for 1 min
blend in 1 C of cream, basil & oregano

beat egg yolks w/ remaining 1/4 C cream
add to sauce, stirring over med. heat until sauce thickens, don't boil
season to taste w/ S & P

spoon over hot buttered pasta
sprinkle w/ parsley
