Ingredients
- Make Pastry Cream first::
- 24 Cupcake Liners
- 24 Lady Fingers, Savoiardi cookies, Hard cookies, sugar coated on one side.(not soft lady fingers)
- 8 oz Mascarpone Cheese, room temperature
- 1/3 Cup powder Sugar
- 1 Cup Espresso or Strong Coffee
- 1 Tbsp Instant Espresso
- 1/2 Cup Amaretto
- 1 Cup Pastry Cream (see recipe below)
- 8 oz Whipping Cream
- 4 oz grated dark Chocolate
- 3/4 Cup 1/2 & 1/2
- Pinch salt
- 1/4 Cup Sugar
- 1 Tbsp Cornstarch
- 2 Egg Yolks
- 1 Tbsp Butter
- 1 tsp Vanilla
Preparation
Step 1
Pastry Cream:
Pour half and half in a saucepan, heat till hot and bubble form around edges.
In a bowl, whisk together sugar and cornstarch, add egg yolks and whisk until pale yellow.
Slowly add the hot cream, whisking constantly till well blended.
Pour back into pan, stir constantly till thick.
Pour into bowl and cover with plastic wrap, refrigerate till cool.
Whip the 8 oz of whipping cream till peaks form.
Fold Mascarpone chees and powdered sugar together. Fold in Pastry cream, fold in whipped whipping cream.Do not over mix. Cover and refrigerate till needed.
Brew espresso, add instant coffee, add Amaretto. Pour into a shallow dish.
Break cookies in half.
Arrange Cupcake liners on a tray.
Dip 2 cookies in the coffee mixture, not too long, but until coffee is soaked in all the way. Put both cookie halves in bottom of cupcake liner. Put a small scoop of cream on top of cookies. Sprinkle with Chocolate. Dip 2 more cookies in coffee mixture, put on top of first layer, top with more cream then chocolate.
Refrigerate till served.
