Salmon Fettuccine

Ingredients

  • 4 oz uncooked fettuccine
  • 2 TBL chopped onion
  • 3 TBL butter
  • 1 plum tomato, seeded & cut into
  • strips
  • 3 TBL lemon juice
  • 1 tsp dried parsley flakes
  • 1/2 tsp grated lemon peel
  • 1/4 tsp salt
  • 1 pouch (7.1oz) boneless skinless
  • pink salmon
  • 2 TBL pine nuts

Preparation

Step 1


Cook fettuccine according to pkg. directions.

Meanwhile, in lg. skillet, saute onion in butter until tender.
Add tomato, lemon juice, parsley, lemon peel & salt.
Bring to boil.
Reduce heat - cook & stir for 2 min.

drain fettuccine - add to skillet.
Stir in salmon.
heat through.
Sprinkle w/ nuts.
