Southwest Hash Browns

Ingredients

  • 1 2-lb pkg shredded hash brown potatoes (or 2 lg. cooked idaho potatoes, shredded
  • 3 TBL butter
  • 2 tsp taco seasoning
  • 1-2 tsp salt, to taste (use more if you started w/ potatoes, less or none of starting w/ hash browns)
  • 1/4-1/2 tsp freshly grd. pepper to taste

Preparation

Step 1

in lg. skillet, melt butter over med heat
add potatoes
as potatoes begin to brown, toss w/ taco seasoning, salt & pepper
serve when potatoes are golden brown, abt 10 min
