Chili Relleno Breakfast Bake

Ingredients

  • HOMEMADE BISCUIT MIX:
  • 1/4-1/2 C Butter 91/2-1 stick)
  • 1 7OZ cans diced green chiles, drained
  • 1/2 LB chorizo sausage, browned & drained (optional)
  • 1 8-oz pkg shredded cheddar cheese
  • 1 8oz pkg shredded monterey jack cheese
  • 4 eggs
  • 2 cups milk
  • 1 cup biscuit mix
  • 1 tsp chili powder or southwest seasoning
  • 1/2-1 tsp freshly grd pepper, to taste
  • 3 C flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 C shortening

Preparation

Step 1

preheat oven to 350
melt butter in 9X13? glass baking dish
layer chiles over butter
sprinkle w/ browned chorizo, if using
layer shredded cheeses over suasage

in separate bowl, mix together eggs, milk, biscuit mix, chili powder & pepper
pour over other ingredients in pan
bake @ 350 for 30-40 min or until golden brown

HOMEMADE BUSCUIT MIX:

stir together the dry ingredients
blend in shortening
store in fridge

SERVE WITH SOUTHWEST HASH BROWNS
