Quick Tomato Sauce with Herbs & Garlic

Herbs and tomatoes always make a fiavourful combination for pasta, rice, meats, fish, poultry, or vegetables. Here, I use basil and rosemary, but you
can also use fresh coriander leaves and tarragon.
Add 4 more cups (1 L) of stock and you have an inexpensive homemade tomato base for soup.

Ingredients
- 3 Tbsp (45 mL) olive oil
- 2 cloves garlic, chopped
- 2 celery stalks, chopped
- 1 medium onion, chopped
- one 28 oz (796 mL) can diced tomatoes
- 1 cup (250 mL) vegetable stock
- 1/2 cup (125 mL) kernel corn, canned or frozen
- 1/2 tsp (2 mL) dried basil
- 1/2 tsp (2 mL) dried rosemary
- 1/2 tsp (2 mL) sea salt

Preparation
Step 1
Heat the oil in a medium-sized saucepan. Saute the garlic, celery, and onion for 2-3 minutes, or until the onion is translucent.
Add all of the remaining ingredients and mi well. Simmer the mixture for 8-10 minutes.
Serve warm over pasta, rice, meats, fish, poultry, or vegetables.
