Sausage & Bean Minestrone

Ingredients

  • 1 lb. Italian sausage, cut into 1" pieces
  • 3 carrots, cut into 1/4" pieces (3/4 cup)
  • 2 cloves garlic, minced
  • 1 can (14 1/2 oz) chicken broth
  • 1 can condensed tomato soup
  • 1 cup uncooked small pasta
  • 1 can (15/5 oz) cannelini beans, rinsed and drained
  • 2 Tbsp. chopped fresh parsley
  • shredded parmesan cheese

Preparation

Step 1

Cook sausage in oil over medium heat, stirring occasionally, until browned (8-10 minutes). Stir in carrots and garlic; cook, stirring occasionally until softened, 4-5 minutes.

Stir in 2 cups water, chicken broth, and undiluted soup; bring to a boil. Stir in pasta; reduce heat to low. Cook until pasta is just tender, 8-10 minutes. Stir in beans and parsley; cook until heated through, 1 minutes.

Serve sprinkled with Parmesan cheese.
