Roasted Broccoli, Red Pepper and Onion

Ingredients

  • 6 C bite-size broccoli florets
  • 1 medium red bell pepper, cut vertically into 1/2 inch strips
  • 1 medium red onion, sliced vertically into 1/4 inch slices (about 1 C)
  • 4 garlic cloves, sliced
  • 1 1/4 t Italian herbs
  • 1/2 t coarse salt
  • 1/8 t pepper
  • 3 T olive oil
  • 1 T lemon juice

Preparation

Step 1

Preheat oven to 425 degrees.

In a large bowl, combine vegetables an garlic. Sprinkle with seasonings. Drizzle oil over the top and mix.

Place vegetables in a shallow baking pan and bake 20 minutes, mixing once, until broccoli is browned in spots and tender. Add lemon juice.
