Fettuccine with Roasted Chicken & Lemon Cream Sauce

Ingredients
- 1 # skinless chicken
- 2 Tbs olive oil
- Salt / Pepper
- 1 # fettuccine
- 2 Tbs minced garlic
- 1 small shallot, minced
- 1/2 C white wine
- 2 C Chicken Broth
- 2 C Cream
- 1/2 bunch italian parsley chopped
- jUice and grated peel of 1 lemon
- 1/2 C grated parmigiano-reggiano cheese

Preparation
Step 1
Preheat oven to 350.
Coat chicken with olive oil and salt and pepper. Roast for 45 minutes or until cooked. Let cool and then shred/slice.
Prepare pasta according to directions.
In large saute pan, heat olive oil and add garlic and shallots and saute until brown. Add wine and cook until reduced by half. Add chicken broth and cream and simmer over low heat until sauce begins to thicken.
Add chicken, parsley, lemon juice and peel and salt and pepper to taste. Heat and then combine with pasta and served with grated parmigiano.
