Ingredients
- 2 large green bell pepper
- 1 pound extra-lean ground chuck or white-meat ground turkey
- 1 cup cooked long grain white rice or cooked brown rice
- 1 can (15 ounces) tomato sauce (divided)
- 1 garlic clove, minced
- 1 teaspoon dried basil (divided)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped onion
- 2 tablespoon grated Parmesan cheese
Preparation
Step 1
Preheat oven to 350 degrees.
Remove tops from peppers cut in half lengthwise.
Seed and rinse.
Set aside.
large mixing bowl combine ground beef, rice, 1/2 cup tomato sauce, garlic, 1/2 teaspoon basil and all remaining ingredients.
divide meat mixture and stuff into pepper halves.
Place in deep 3 quart baking dish.
Stir remaining basil into reserved tomato sauce and pour over peppers.
Cover and bake in preheated oven for 55 to 60 minutes or until meat is not longer pink and peppers are tender.
Serve in pasta bowls with additional Parmesan cheese, if desired.
Makes 4 servings.
Note: Double or Triple the recipe as needed.
