Romaine & Spinach Salad with Pine Nuts

  • 1/2 head romaine lettuce
  • 1 bunch fresh spinach, about 6 cups, lightly packed
  • 1 clove garlic, minced
  • 1 tsp dijon mustard
  • 2 TBSP white wine vinegar or lemon juice
  • dash worcestershire sauce
  • 1/3 cup olive oil
  • salt & pepper
  • 1/2 cup pine nuts



Step 1

Wash lettuce and spinach well. Thoroughly dry and tear into small pieces. Mash garlic in a small bowl with mustard. Whisk vinegar or lemon juice and worcestershire sauce. Slowly whisk in oil, drop by drop until smooth & thick. Add salt & pepper to taste. Toss lettuce & spinach in bowl with vinaigrette. Sprinkle with pine nuts.

Serves 4-6
