  • for salad:
  • 1 tbsp. olive oil
  • 2 tbsp. balsamic
  • diced tomatoes
  • 1/4 small red onion
  • 1 tbsp. fresh basil
  • s & p
  • arugula
  • for chicken
  • thin chicken
  • 3/4 cup Italian breadcrumbs
  • 1/3 cup grated parm
  • 1 lemon
  • 1 tbsp. olive oil
  • s & p

Preparation

Step 1

1. whisk olive oil and balsamic. add tomato, basil, and onion, s & p and set aside

2. oven to 450, put sheet pan in

3. combine breadcrumbs and cheese; combine olive oil, lemon, and pepper

4. season chicken with s & p

5. dip chicken into lemon/oil and then into breadcrumbs

6. remove pan and spray

7. bake 15-20 minutes turning once
