Ingredients
- 1 lb ground round beef
- 1 jar (12 ounces) chunky salsa
- 1 cup frozen sweet niblet corn, thawed and drained in colander
- 3/4 cup Hellman's mayonnaise
- 1 tablespoon chili powder
- 1 small onion, chopped
- 2 cups low fat tortilla chips, divided
- 2 cups (8 ounces) shredded Kraft Natural Colby/Monterey Jack cheese, divided
- Lettuce, shredded (optional)
- Tomatoes, chopped (optional)
- Green onion, chopped (optional)
Preparation
Step 1
Preheat oven to 350. In a skillet, brown meat with onion and drain well. Stir in salsa, corn, mayonnaise, and chili powder. In a greased 2 quart casserole dish, layer half of the meat mixture, chips and cheese. Repeat layers.
Bake 20-30 minutes until thorroughly heated. Top with shredded lettuce, chopped tomatoes, and chopped green onions if desired.
