Ingredients

    oz. mushrooms

  • 1

    cup each diced onions and red bell peppers

  • 4

    tbsp. unsalted butter

  • 5

    cloves garlic, minced

  • Salt and black pepper

  • Add:

  • 8

    oz. cooked corned beef, diced

  • 1

    tbsp. minced fresh thyme

  • ?? 1 lb. brussel sprouts, cooked and quartered

  • Topping:

  • 1/4

    cup mayo

  • 2

    tbsp. spicy brown mustard

  • 1

    tbsp. ketchup

  • 1

    tsp. worcestershire sauce

Directions

Cook mushrooms, onions and bell peppers in 2 tbsp. butter in a cast iron pan until liquid evaporates. Stir in garlic, salt, pepper - cook 30 seconds. Transfer to bowl, wipe skillet clean. Melt 2 tbsp. butter in skillet over high heat. Add brussel sprouts and corned beef to skillet, season with salt and pepper, cook until liquid is released and evaporates, about 10 min. Stir in thyme and mushroom mix, heat through. Mix topping and serve with corned beef mix. Serve with poached eggs.
