Waffle of Insane Greatness (Recipe x 2 & x 3)

Ingredients

  • Recipe X 3:
  • 1 1/2 cup all-purpose flour
  • OR: OPT: 3/4 cup AP flour & 3/4 cup white whole wheat flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • OPT: ADD 2 tbs Benefiber powder
  • 2 cups whole milk or buttermilk
  • 2/3 cup vegetable oil
  • 2 eggs
  • 3 teaspoons sugar
  • 1 1/2 teaspoons vanilla extract
  • Butter and syrup, for serving
  • 2 1/4 cups flour AP or AP/WWW blend
  • 3/4 cup cornstarch
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1 1/2 tsp salt
  • 3 cups milk or buttermilk (almond milk ok)
  • 1 cup veg oil
  • 3 eggs
  • 4 1/2 - 6 tsp sugar
  • 2 1/4 - 3 tsp vanilla ext

Preparation

Step 1

In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.

Preheat a waffle iron. Brush waffle iron w melted butter
(recipe says: Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily.)
Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.
