Lentil Soup South Beach Phase 1

Ingredients

  • 4 tsp. Olive Oil
  • 1 Medium Carrot,
  • Half lengthwise,
  • slice thin
  • 3 Green Onions,
  • sliced thin
  • 2 Cloves Garlic,
  • slice thin
  • 2 tsp Chili Powder
  • 2 cans of Lentils,
  • rinse & drain or
  • 1 C dry Lentils
  • 14 1/2 OZ can Tomatoes,
  • diced
  • 1 3/4 C Chicken Broth
  • 2 OZ Smoked ham,
  • chopped

Preparation

Step 1

Heat oil in large soup pot.
Add onion and carrot; cook
for for 3 min. Add garlic
cook 2 minutes more. Add
chili powder, tomatoes,
broth and dry lentils.
Cook until lentils are
soft; add ham, cook
10 more minutes.
Serve
