Ingredients
- 3 c sifted flour
- 1/2 tsp. salt
- 1 c UNSALTED butter( room temp)
- 2 c sugar
- 4 eggs( room temp)
- 1 tsp. vanilla
- 2 tbsp. lemon zest
- 2 tbsp. fresh lemon juice(DIVIDED)
- 1 c whole milk (DIVIDED)

Step 1
Preheat oven to 375... lightly pam cupcake liners., sift flour & salt together in bowl., In second bowl beat butter and sugar together til light and fluffy blend in eggs one @ a time, be sure each egg is well blended before adding next egg, add vanilla, lemon zest., On low gently mix flour mixture into butter mixture 1/3 at a time, alternate 1/2 of milk,1/2 of lemon juice after each second addition of flour, beat just until mixed., DO NOT OVER MIX...fill cupcakes 3/4 full, bake 17 mins
