Chopped Greek Salad

Ingredients

  • 1/4 cup fresh lemon juice
  • 1 small garlic clove, minced
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 pepper
  • 2 tbsp evoo
  • 1.5 heads hearts of romaine, chopped (about 12 cups)
  • 1 cup canned chickpeas, rinsed and drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup chopped cucumber
  • 1/2 small red onion, chopped
  • 1/4 cup pitted kalamata olives
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves
  • 2 whole-wheat pitas, toasted and halved.

Preparation

Step 1

1. whisk together the first 5 ingredients in a bowl. Slowly whisk in olive oil until well combined.

2. Place romaine in large serving bowl. Arrange chickpeas and next 6 ingredients on top in sections. Sprinkle mint leaves over the salad. Drizzle the dressing over the salad just before serving and toss. Serve with toasted pita halves.
