Sweet Potato Fries

Ingredients

  • 3 large sweet potatoes
  • 3 tbsp arrowroot starch
  • 3/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 tsp coarse real salt
  • 2 dashes pepper
  • 1 1/2 tbsp Fresh parsley, finely chopped
  • 1 1/2 tbsp coconut oil, in liquid form

Step 1

Preheat oven to 450. Line two baking sheets with parchment paper. In a small bowl combine arrowroot starch, garlic powder, paprika, parsley, salt, and pepper. Set aside. Peel the sweet potatoes and cut into thin long slices. The thinner your slices, the crispier your fries. Place the slices in a bowl. Pour the spice mix on top of the sweet potatoes andn toss. Drizzle the coconut oil over the potatoes and toss until evenly distributed. Lay out the potatoes on the parchment lined sheets, not touching, if possible. Bake on the top racks for 20 minutes, remove and turn over and cook another 5 minutes. Fries are done when flesh starts to look bubbly and turns golden brown.
