  • OIL
  • 2 EGGPLANTS
  • ALL PURPOSE FLOUR
  • 4 EGGS
  • BREAD CRUMBS ( I USE LA ROMENALLA SEASONED BREAD CRUMBS )
  • 1 QUART MARINARA SAUCE
  • 8 OUNCE MOZZARELLA CHEESE
  • 4 OUNCE GRATED ROMANO CHEESE

Preparation

Step 1

PRE HEAT OVEN TO 350 F AND OIL IN A LARGE PAN, A DEEP FRYER MAY BE USED.

PEAL THE EGG PLANT AND CUT INTO 1/4 INCH THICK SLICES, COAT THE EGGPLANT WITH FLOUR.

IN A SEPARATE BOWL, BEAT THE EGGS.

COAT THE EGGPLANT IN THE EGGS THEN COAT WITH BREAD CRUMBS, PLACE ON A PLATE UNTILL FINISHED COATING

FRY THE EGGPLANT UNTIL GOLDEN BROWN,

IN A 9 X 13 BAKING DISH PLACE A LAYER OF SAUCE ACROSS THE BOTTOM, A LAYER OF EGGPLANT,SAUCE, MOZZARELLA CHEESE, REPEAT TILL DONE. ADDING SAUCE AND ROMANO CHEESE ON TOP.

BAKE FOR 20 TO 25 MINUTES AT 350 F
