Petit Four Cake Recipe

Use this recipe to make pound-cake-like petit fours. This is a half recipe (a full 16 oz of butter, sugar and flour would make a "pound" cake). I have included variations in the Directions section for Chocolate, Lemon, Orange and Raspberry pound cakes.

Ingredients

  • 8 oz unsalted butter
  • 8 oz sugar
  • 4 large eggs (room temperature)
  • 8 oz all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla bean paste

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. Spray a silicone pan with cooking spray.
3. Combine flour, baking powder and salt.
4. In a separate bowl, cream the butter then add the sugar and vanilla.
5. To the butter mixture, add the eggs, one at a time.
6. Slowly add the flour mixture.
7. Fill silicone pan with mixture until half full.
8. Bake 15-18 minutes.

Variations:
1. Chocolate - only use 7oz of flour and add 2 oz unsweetened cocoa powder.
2. Lemon - add 2 tbsp lemon zest and 2 tsp lemon juice.
3. Orange - add 1 tbsp orange zest and 1 tsp orange juice.
4. Raspberry - add 2 tbsp raspberry Icing Fruit.
