Ingredients

  • Frosting:
  • 2-cups all-purpose flour
  • 1/2-cup sugar
  • 1/2-cup Splenda for baking
  • 2 -tsp.baking soda
  • 2 -eggs, beaten
  • 1-20 oz. can unsweetened ,crushed pineapple, undrained
  • 1/2-cup chopped pecans, toasted
  • 1-8 oz .cream cheese
  • 2-TBS. butter, softened
  • 1-1/2 - cups powdered sugar
  • 1-tsp. vanilla

Preparation

Step 1

In a large bowl, combine flour, sugar, Splenda, & baking soda. Combine eggs & pineapple; stir into
dry ingredients just until moistened.
Stir in nuts.
Spray a 13"x9" pan, pour batter into pan.
Bake at 350 for 32-38 minutes or a toothpick tests clean. Cool completely.

Frosting:
In a large bowl, beat cream cheese & butter until fluffy.
Add sugar & vanilla , beat until smooth.
Store cake in fridge.
