  • 1/2 C chopped fresh pineapple
  • 1/2 C soy sauce
  • 1/2 C ketchup
  • 1/2 C packed light brown sugar
  • 1/3 C Chinese rice wine or dry sherry
  • 1/4 C honey
  • 3 T hoisin sauce
  • 1 T Chinese 5 spice powder
  • 1 2โ€ piece of ginger, sliced into thin rounds
  • 6 bone-in pork sirloin chops (1/2โ€ thick)
  • Vegetable oil for brushing

Preparation

Step 1

Pulse the pineapple, soy sauce, ketchup, brown sugar, rice wine, honey, hoisin sauce and five spice powder in a blender or food processor until smooth. Transfer to a medium saucepan and add the ginger. Bring to a simmer over medium heat, stirring occasionally, about 3 min. Transfer to a large bowl and let cool. Add the pork chops, turning to coat, cover and refrigerate at least 4 hours or overnight.
Preheat broiler or grill. Remove chops from marinade, letting excess drip off. Transfer marinade to saucepan. Cook the marinade over medium heat, stirring occasionally, until it boils and thickens slightly, about 7 min. Strain and set aside.
Transfer pork to the broiler and cook until done, about 6 min. Flip and continue until cooked through, another 6 min. Remove and let rest 5 min. Serve with sauce
