Apple Cake

Ingredients

  • 3 c all purpose flour
  • 2 c sugar
  • 3 eggs
  • 3 c apples peeled and chopped
  • 1 c canola oil
  • 2/3 c apple juice or milk
  • 1 t baking soda
  • 2 t vanilla
  • 2 t cinnamon
  • 1/4 t nutmeg***
  • 1/2 t salt
  • 1 c pecans, halved and separated
  • Icing
  • 2 c powdered sugar
  • 2 T milk
  • 1 t vanilla

Preparation

Step 1

Preheat oven to 350 and grease and flour a bundt pan.
In a large bowl, toss apples with flour to coat.
Add remaining ingredients and stir to combine. If using nuts break the pecan halves into pieces and add to the batter. Save some for garnish.
Pour the mix into prepared pan and bake 50-60 min or until toothpick comes out clean.
Let cake cool in the pan 15 min before removing. When cake is completely cool drizzle icing and top with pecans.
To prepare the icing, place three ingredients in a bowl and mix until smooth. If its too thick add one teaspoon at a time of milk. If you don't have a bundt pan, use two loaf pans.
