Fig-tacular Bacon Burger

Spectacular burger that combines bacon and cilantro with an awesome fig relish. Oh yeah, don't forget the prosciutto and manchego.
Ingredients
- 2 1/4 lbs. ground sirloin (85% fat free)
- 8 stips - smoked bacon
- 6 ramps (bulbs dices, leaves in strips - can substitute scallion)
- 3 Tbs chopped cilantro
- Salt (to taste, careful w/ prosciutto)
- Pepper
- 8 Grilled figs (or 6 Tbs fig jam)
- 1 medium diced yellow onion
- 5 Tbs balsamic vinegar
- 1/2 stick of unsalted butter
- 8 slices manchego cheese
- 8 slices prosciutto

Preparation
Step 1
Prep burgers:
Cut bacon into 1/8 inch strips, slowly render and set aside (keep bacon grease handy)
Mix cilantro, bacon, diced ramp bulbs, salt, and pepper with ground sirloin.
Coat outside of burgers with bacon grease, refrigerate.
Prepare fig relish:
Melt butter over medium heat.
Sweat onions until translucent, increase heat to high and brown butter a bit.
Add balsamic vinegar, reduce by 1/2.
Add grilled (diced) figs or fig jam.
Stir until combined and thick.
Set aside to cool to room temperature.
Prepare buns:
Put once slice of mancego and prosciutto on each side of each bun.
Burgers:
Cook burgers on grill (preferred) to desired temperature.
Pull burgers from grill, rest 2 - 3 minutes.
Put burgers on buns and buns on the grill.
Toast buns 60 - 90 seconds each side applying slight pressure to smash a bit.
Garnish burgers with ramp leaves and fig relish.
