Ingredients
- 4 Chicken Breast
- 2-14 oz. cans fire roasted tomatoes
- 1-8oz can tomato sauce
- 1-14 oz. can whole kernel corn{drained and rinsed}
- 1-14 oz. can black beans{drained and rinsed}
- 1 c chicken broth
- 1 red bell pepper diced
- 1/2 small yellow onion diced
- 3 garlic cloves crushed
- 3/4 Tblsp. ground cumin
- 1 1/2 tsp. chili powder
- 1 tsp. dried oregano
- kosher salt and pepper to taste
- 1/2 of, 8 oz. pkg. cream cheese{ 4ozs.}

Preparation
Step 1
combine all ingredients, EXCEPT cream cheese, into crock pot cook on high for 3 hrs., at the end of the 3 hrs...pull cooked chicken from crock pot, place one at a time into bowl and pull{shred}apart with 2 forks{Food processor is great for this part as well} replace each to crock pot as shredding is finished, add the 4ozs. of cream cheese now,alllow to cook for final 30 mins.
