Ingredients
- 3 T chili powder
- 1 t cumin
- 1 t pepper
- 1/4 salt
- 4 boneless skinless chicken breast halves
- 2 t canola oil
- 1 can black beans, rinsed and drained
- 1 C frozen corn
- 1 C salsa
- 2 C cooked rice

Preparation
Step 1
In a small bowl, mix seasonings; sprinkle over both side of chicken.
In a large skillet coated with cooking spray, heat oil over medium heat. Brown chicken on both sides.
Add beans, corn and salsa to skillet. Cook, covered, 10-15 minutes or until chicken reads 165 degrees.
Cut chicken into slices and serve with bean mix and rice.
