Slow Cooker Cheeseburger Soup

Ingredients

  • 4 c peeled and diced potatoes
  • 1 small onion diced
  • 1 stalk celery chopped
  • 3/4 c shredded carrots
  • 1 t dried basil
  • 1 t dried parsley
  • 3 c chicken broth
  • 8 oz ground beef plus 1 T oil
  • 4 T butter
  • 1/4 c flour
  • 1 1/2 c half and half
  • 1 t salt to taste
  • 1 t garlic powder
  • 1/4 c sour cream ****substitute
  • 2 c shredded mild cheddar **** substitute

Preparation

Step 1

Add potatoes, onion, celery, carrots, basil, parsley, and chicken broth to slow cooker. Cook on low 7-8 hours or high 3-4 hours.
About 30 min before serving, add oil and ground beef to a large pan and stir over med heat until browned. Transfer to towel and wipe the grease out of the pan.
Add butter to pan and stir until melted. Add flour and stir until mixture clumps up. Slowly wisk in half and half until mix thickens. Stir in salt, pepper and sour cream.
Add cream mix, beef and shredded cheese to crock pot. Stir to combine and serve warm.
