Ingredients

  • 2.5 lbs. beef tenderloin, cut into strips
  • 2 Tablespoons: vegetable oil
  • 6 Tablespoons: butter
  • 1/4 cup: finely chopped onions
  • 1 lb. small mushrooms, thickly sliced
  • 3/4 cup: beef broth
  • 1 Tablespoon: Dijon mustard
  • 3/4 cup: sour cream
  • 1/4 cup: Red wine
  • 1/2 Tablespoon: chopped, fresh dill
  • 12 ounces: wide egg noodles
  • 1 Tablespoon: paprika

Preparation

Step 1

Pat meat dry with paper towels. Sprinkle with salt and pepper. Heat vegetable oil in a heavy skillet over high heat until very hot. Brown the meat for 1 minute per side. Transfer to a rimmed baking sheet, and add 2 Tablespoons of butter into the skillet. Add chopped onions to skillet and saute for 2 minutes. Add mushrooms and sprinkle with pepper. Saute for 12 minutes, until liquid evaporates. Add the beef broth, then the Red wine. Simmer until liquid thickens and just coats mushrooms (about 14 minutes). Stir in sour cream and dijon mustard. Add meat. Simmer over medium heat until the meat is heated through, but still medium-rare for about 2 minutes. Stir in chopped dill.

*Prepare noodles, coat with butter. Top the noodles with the beef and sauce. Sprinkle with paprika.

Serves 4 people.
