Lemon Pasta with Roasted Shrimp

  • 2 # (17-21) peeled and deveined shrimp
  • Olive oil
  • Kosher salt and pepper
  • 1 # angel hair pasta
  • 4 T unsalted butter
  • Zest and juice of 2 lemons
  • 1 C Olive oil
  • 8 T unsalted butter
  • 1/2 C Olive oil



Step 1

Preheat oven to 400 and place shrimp on a sheet pan with 1 T olive oil, ½ tsp salt and ½ tsp pepper. Toss well. Spread them in one layer and roast for 6-8 min.
Meanwhile, drizzle some olive oil in a large pot of boiling salted water and add the angel hair and cook about 3 min. Drain, reserving 1/2 C of the cooking liquid. Quickly toss the angel hair with the melted butter, 1/2 C olive oil, lemon zest, lemon juice, 2 tsp salt, 1 tsp pepper and 1/4 C of the cooking liquid. Add shrimp and serve hot.
