Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 egg
  • 1/2 cup molasses
  • 2 1/4 cups all purpose flour

Step 1

In a large mixing bowl, beat shortening and butter with an electric mixer on med-high speed for 30 seconds. Add the sugar, baking soda, cinnamon, nutmeg, ginger and cloves. Beat until combined scraping sides of bowl occasionally. Beat in egg and molasses. Beat in as much of the flour as you can with the mixer. Stir in remaining flour.

Cover and chill dough in refrigerator about 2 hrs or until easy to handle. Divide dough in half. Shape each half into a 9" long roll. Wrap rolls in plastic wrap or waxed paper. Chill in the refrigerator for at least 4 hrs or up to 24 hrs.

Cut rolls into slices about 1/4" thick. Place slices about 2" apart on an ungreased cookie sheet. Bake cookies in a 375 degree oven about 8 min or until edges are firm. Cool on cookie sheet for 2 min. Transfer cookies to a wire rack; cool.
