CHORIZO MEATLOAF

  • 2 tablespoons unsalted butter
  • 1 onion (minced)
  • 1 tablespoon Kosher salt
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon chipotle powder
  • 2 cups day old bread (crust removed and small diced)
  • 1/2 cup whole milk
  • 2 tablespoons flat leaf parsley (finely chopped)
  • 1 pound ground beef
  • 1 pound ground chorizo
  • 2 eggs
  • 1/4 teaspoon freshly ground black pepper
  • chipotle ketchup glaze (store-bought)
  • serve with mashed potatoes

Preparation

Step 1

Preheat oven to 350ºF.
In a medium saucepan, add the onions, butter, 1/4 teaspoon Kosher salt and cook over medium heat until tender, about 5 minutes. Add the garlic, paprika, chipotle powder and cook for one minute. Remove from the heat and cool slightly.
Meanwhile, soak the bread in milk until it is soft and moist. Squeeze out excess milk and place in a large bowl. Add the parsley, ground beef, ground chorizo, eggs, onion mixture, season with salt and pepper and mix until combined. Pack the mixture in a greased loaf pan. Pour half of the ketchup glaze on top and bake for 1 hour. Remove from the oven and allow to cool slightly.
Slice the meatloaf and serve with remaining glaze and mashed potatoes.
Helpful Tip: replace chorizo with your favorite sausage or ground meat!
