Blueberry Muffins

Ingredients
- 2 cups flour
- 1 cup plus 1 Tbs sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 cup butter or margarine, melted and cooled
- 1 egg, lightly beaten
- 1 tsp vanilla
- 2 cups fresh blueberries (or thawed, drained frozen blueberries)

Step 1
Preheat oven to 400 degrees. Grease 12 regular size (or 6 large) muffin cups.
In a large bowl, stir together flour, 1 cup sugar, baking powder, and salt. In another bowl, stir together milk, butter, egg, and vanilla until blended. Make a well in the center of the dry ingredients; add milk mixture and stir just to combine. Batter will be thick. Mash 1/4 cup blueberries and stir into the batter with a few strokes. Stir in the remaining blueberries.
Spoon batter into muffin cups and sprinkle with 1 Tbsp sugar. Bake 20-25 minutes or until cake tester inserted into center of muffin comes out clean. Let cool 5-10 minutes before removing from pan.
