Rotel Frittatta

Ingredients

  • 2 Tbs. butter
  • 2 zucchini. cut in half lengthwise and sliced
  • 1 green pepper, sliced
  • 1 potato, thinly sliced
  • 1 onion, chopped
  • 8 eggs
  • 1 can Rotel Diced Tomatoes and Chilies
  • 1 cup shredded cheddar cheese
  • 2 Tbs. chopped parsley
  • 1 tsp. oregano

Preparation

Step 1

Preheat Broiler. In large oven proof skillet sautee zucchini, green pepper, potato and onion in hot butter over medium heat 10 to 12 minutes or until vegetables are tender. In a large bowl whisk eggs and Rotel until blended. Stir in cheese, parsley and oregano. Pour over vegetable mixture. Reduce heat to low, cook 6 minutes. Remove from heat. Broil 6 inches from heat source for 3 to 5 minutes or until eggs are set.
