Preparation
Step 1
Mix the Marinade mix, Olive oil, water and red wine vinegar in a small bowl. Reserve 2 tbsp of the mixture for basting while grilling. Place the Pork chops and marinade mix in a ziplock bag and marinade in the refrigerator for 15 to 30 minutes.
Heat a medium Cast Iron grill or skillet on medium to high heat, when it begins to smoke add a splash of canola oil and spread it around to coat the pan.
Season the pork chops with salt and pepper.
Sear the pork chops covered for 2-3 minutes until lightly browned. Flip them over and baste with the reserved marinade, cover and sear for 2-3 minutes. Flip over and insert an instant read thermometer so you can gauge the temperature of the meat should be between 140 and 160 to be done but you will remove at 130 or 140 and cover for 5 minutes to continue cooking.
If not at desired temperature, flip and cook another 2 minutes, then flip and check temperature. I had cooked each side for a total of 5 minutes each put the pork chops where a thick cut.
Enjoy
