Rosemary Apricot Chicken

Use Chicken breasts

Ingredients

  • 4 garlic cloves, crushed with garlic press
  • 2 t salt
  • 1 t dried or fresh rosemary, crumbled
  • 1/2 t ground black pepper
  • 4 chicken breasts
  • 1/2 cup apricot preserves
  • 2 t fresh lemon or lime juice
  • 1 t Dijon mustard

Preparation

Step 1

1. In cup, combine garlic, salt, rosemary, and pepper. Rub mixture on chicken. Place chicken in large bowl or ziploc; refrigerate 2 hrs to marinate
2. Preheat oven to 350. Arrange chicken, skin side up, in roasting pan or jelly roll pan. Roast chicken 20 minutes, rotating pan halfway thru.
3. Meanwhile, in small bowl, with fork, mix apricot preserves, lemon juice, and mustart. Brush apricot mixture over chicken, roast about 20 minutes longer.
