Morning Egg Muffins

Ingredients

  • 10 oz. fresh baby spinach, cooked
  • 1 lg Roma tomato, diced
  • 4 whole eggs
  • 4 egg whites
  • 1 med Vidalia onion, chopped
  • 2 Tbsp. finely chopped fresh parsley
  • 2 Tbsp. chia seeds
  • 1/4 tsp. salt
  • 1/4 tso white pepper

Preparation

Step 1

Preheat oven to 350°. Spray muffin tin with nonstick baking spray. Wisk all together. Pour mixture evenly into cups

Bake 30 minutes or until set.
