Ingredients
- 10 oz. fresh baby spinach, cooked
- 1 lg Roma tomato, diced
- 4 whole eggs
- 4 egg whites
- 1 med Vidalia onion, chopped
- 2 Tbsp. finely chopped fresh parsley
- 2 Tbsp. chia seeds
- 1/4 tsp. salt
- 1/4 tso white pepper
Preparation
Step 1
Preheat oven to 350°. Spray muffin tin with nonstick baking spray. Wisk all together. Pour mixture evenly into cups
Bake 30 minutes or until set.
