Mushroom Barley Soup

Ingredients

  • 1 Onion
  • 1-3 Tbsp Oil
  • 1 1/2 Tbsp Flour
  • 1 cup Boiling water
  • 10 cups Water
  • 1/2-3/4 cup Barley
  • 1/2-3/4 cup Small white beans
  • 1/2-3/4 lb Mushrooms
  • 1 Carrot
  • 1 Tbsp Salt
  • 1/4 tsp Pepper
  • 1/4 bunch Fresh dill

Preparation

Step 1

1. Saute onion until golden.
2. Blend in flour, stirring 1-2 minutes to form a roux.
3. Pour boiling water into mixture. Mix and add cold water.
4. Chop carrot and dill. Add to soup.
5. Add remaining ingredients.
6. Bring to a boil over medium/high heat.
7. Reduce heat. Cover and simmer 1½ hours.
