Ingredients

  • 1 T olive oil
  • 1 lb sausage, cut in bit-sized chunks
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 29 oz black beans, drained and rinsed
  • 14 oz beef broth
  • 14 oz chicken broth
  • 1 t fresh thyme
  • 1 t red pepper flakes
  • 1 bay leaf
  • 1/2 t mace
  • 1/2 t salt
  • pepper
  • 3 T cilantro, chopped
  • 3 green onions, sliced
  • Cooked rice

Preparation

Step 1

Heat oil over medium heat. Add sausage and cook until begins to brown, about 3 minutes. Add celery and onion; cook until softened, about 3 minutes.

Stir in all but the last 2 ingredients. Heat just to a boil, then reduce to a simmer. Cook about 20 minutes.

Stir in cilantro and green onions. Serve over rice.
