Ingredients
- Topping:
- 5 lg sweet potatoes
- 1/4 tsp. salt
- 1/4 cup butter
- 2 eggs
- 1/2 tsp. vanilla
- 1/4 tsp. grd. cinnamon
- 2 Tbsp. heavy cream
- 1/4 cup butter, softened
- 3 Tbsp. flour
- 3/4 cup packed light brown sugar
- 1/2 cup chopped pecans
Preparation
Step 1
Peel and cut potatoes into chunks and boil until soft.
Drain and, using a hand beater, combine in large bowl with the rest of the ingredients. Transfer to prepared baking dish.
Combine topping in medium bowl with pastry blender or fingers to consistency of course meal. Sprinkle over the sweet potato mixture.
Bake in preheated 350 degree oven until topping is crisp and lightly browned, about 30 to 45 minutes.
