Spinach, Shrimp, and Avocado Salad

Ingredients

  • 8 Cups Fresh Spinach, washed & dried
  • 3 Dozen Medium Shrimp, approximately
  • 3 Tablespoons Lemon Juice
  • 3 Tablespoons Olive Oil
  • 1 Tablespoons Capers, chopped
  • 1/2 Teaspoon Honey
  • Salt and Pepper
  • 4 Plum Tomatoes, chopped
  • 1 Avocado, sliced

Preparation

Step 1

Cook the shrimp in simmering salted water until opaque,
3-5 minutes; cool.

In a bowl, whisk together lemon juice, olive oil, chopped capers, and honey; season with salt and pepper.

In large bowl, toss with spinach, tomatoes, avocado, and shrimp.
