Lemon Basil Shrimp and Pepper Salad

Ingredients

  • 1/2 pound medium cocktail shrimp
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 6 basil leaves, sliced
  • 8 cups baby spinach leaves
  • 1/4 cup chopped roasted peppers
  • 1/4 cup crumbled feta cheese
  • Salt and pepper, to taste

Step 1

Combine the shrimp with the olive oil, lemon juice and basil. Season with salt and pepper.

Divide the spinach and peppers between two plates. Top with the shrimp, drizzling any extra dressing from the shrimp on the salad. Top with the feta cheese and serve.
